Okra Soup

Okra soup can be prepared with or without ogbono but I am going to deal with how to prepare it without ogbono.Okra soup much like other soups(apart from bitter leaf and a few others) doesn't take much time to prepare ,after cutting the okra and the leaves to be used for cooking the soup then you are almost halfway to getting the soup done.okra soup is prepared in different parts of Nigeria and so is a very popular soup.So here are the steps to preparing a delicious okra soup,starting with the ingredients.
INGREDIENTS

  • Okra
  • Pumpkin leaves
  • Shaki(optional),beef
  • Ice fish,dry fish,stockfish
  • Palm oil
  • Stock cubes
  • Crayfish
  • Pepper and salt
  • Onions
Cooking Directions
Boil the stockfish for twenty minutes then leave it to soak.Cut the okra into tiny bits,the smaller it is the more the soup will draw. Wash the shaki(optional) and boil,when the shaki is well cooked add the stockfish and dry fish to it.Grind the Crayfish and the pepper and set aside.When you are convinced the shaki and stock fish are well cooked wash the beef and add to the pot and also put the stock cubes and onions to it.When the beef is well cooked wash the ice fish and add to the pot and cook it till it is done.
Pour the palm oil in a separate pot and Melt it if the oil is congealed then fry the okra to start the drawing process then pour some meat stock into it and do it continually until it starts drawing.Put the vegetable and stir the soup, then add the fish,meat,crayfish, pepper and salt for taste and stir well then cover the pot.Allow the soup to cook for a few minutes and the soup is ready! can be eaten with garri,fufu,pounded yam.
